This is how ODEON was born in Dubaï in 2018, through a Café created with his partner Morgane Duhamel, and then over time with the catering services, the Market and the Signature Restaurant on Beach Road, Jumeirah 3.
Chef Thomas wishes to serve simple food through selected products and exceptional recipes.
He is always looking for new ways of serving customers the best as possible.

Yannick Alleno, Michelin Star Chef
From 2010 to 2016, Thomas was trained and supported by Yannick Alleno who became his mentor. Through renowned restaurants such as “Pavilion Ledoyen” in Paris, “Cheval Blanc” in Courcheval and “One & Only The Palm” in Dubai, Chef Thomas has built a rich culinary know-how and a passion for fine food.
Zuma Dubai
In 2016 Thomas took over the kitchen of Zuma Dubai, managing part of the 95 cooks of the team, for 2 years.
