Crottin de Chavignol is a French goat’s cheese originate from the Berry village of Chavignol located in the Cher department. The cheese takes its name from the village of Chavignol merged with the town of Sancerre between 1790 and 1793. Crottin de Chavignol is a raw milk cheese made from whole goat’s milk, it is obtained by lactic coagulation. It is in the form of a flat cylinder very slightly domed. The fine ivory rind may or not have mold. The paste white and relatively firm, can become brittle depending on ripening.
