Chicken Jerk Rub is a herbaceous, woody and slightly sweet spice blend, with a touch of cayenne pepper to rub on poultry, before cooking on the barbecue, on the plancha, in the oven or in the pan. Use it in a dry marinade, or mix it with oil, mustard, or ketchup sauce. It is necessary to rub the meat with the mixture as for a massage, so that the spices penetrate and give a real taste to the meat. Ideally, marinate for 3 hours to overnight in the fridge.
