It is said that the Marquise de Sablé (de Souvre) would have brought to the court of King Louis XIV small dry round biscuits that “Monsieur” the King’s brother found very suitable. He ordered from the famous Vatel, head waiter of the Grand Condé, that from now on he be served for his rising “small shortbread biscuits” named in homage to the Marquise de Sablé.
Our traditional shortbread cookies are small crumbly biscuits, made from flour, sugar, eggs, butter, almonds and Camargue fleur de sel.
