Apple & Chicken Rillete
Prepared from poultry raised outdoors in Eure et Loir, our homemade rillettes were cooked for 15 hours in cast iron pots, and are crumbled by hand. Deposited on an apple compote, they are served as a spilled cream.
The recipes were conceived in collaboration with two members of the Culinary College of France : Stephan Perrotte, best Jam Maker of France in 2014 and champion of the World in 2015 for the compote, and Emilie Martin, prize Epicure 2016 and 2017.
