Allowed to grow when ripe, full of sun and sugar, the peppercorns change from a green to red color. It is then picked by hand and left to dry for eight days in the sun.
Picked at maturity, the result is a red pepper where the aromas of the fruit come to coat the spiciness of the pepper. The grain develops sweet flavors that go very well with red meat. Its astonishing scent is reminiscent of apple and pear compote, with notes of vanilla biscuit, refreshed by a scent of eucalyptus.
